You’ll love how cute and adorable this minions cookie recipe is! Whether you have kids or work with them or have a million nieces and nephews, I’m sure at one point or another you have heard about Despicable Me, or better yet, the Minions! I literally watch the movies because they.crack.me.up (especially Bob). They are too cute!
I recently took a trip back home to Miami in December for a much-needed break from Texas (I love you but you’re exhausting sometimes…). It was great to see and catch up with everyone but my favorite part of the trip was getting to spend 2 whole days at Universal Studios with my mom! I hadn’t been since August and so much had changed but the one thing I was adamant on was FINALLY going on the Despicable Me Minion Mayhem ride.
I didn’t care how long I needed to wait but I was going on that ride! As soon as we got in, we headed straight to it with the intentions of waiting whatever it takes… My heart sunk a little when I realized it was 9 a.m. and there was a 90-minute wait but it’s okay! I’ll wait…
… That did not last very long. If you’ve ever been to Florida, you know when it’s hot, it’s HOT. So we decided to wait till the wait time lowered and we snuck in next door to get some snacks and we stumbled upon the bakery display case and I was so amazed!
They had so many treats in the shape of characters but these Minions treats were hands-down my favorite! They had cupcakes, candy apples, and cookies that all looked like Minions. I wanted needed that Minions cookie recipe.
I’m sure you guys are thinking the same thing! Well…

Despicable Me Minions Cookie Recipe
Makes approximately 16 cookies
Ingredients:
- 1 Box of Cake Mix (I like King Arthur’s Gluten-Free Yellow Cake)
- 2 tablespoons Gluten-Free Flour
- 1/2 cup Vegetable Oil
- 2 Egg Whites
- Blue Gel Food Coloring
- Yellow Gel Food Coloring
- 3 cups Powdered Sugar
- 1/3 cup Butter (softened)
- 3-4 tablespoons Milk
- 1 teaspoon Vanilla Extract
- Piping Bag
- Large Candy Eyes
- Wilton Black Decorating Icing
Preheat the oven to 350 degrees and line a baking sheet with a silicone baking mat or parchment paper.
Combine your cake mix, flour, vegetable oil and egg whites into a bowl and mix it until it’s blended together. Add a couple drops of blue gel food coloring to your dough.
Once the cookie dough is starting to blend with the blue, use your hand and continue to knead the cookie dough. (Be mindful that your hands may turn blue but it comes out easily… maybe.)
Use a small cookie scoop to roll the cookie dough into 2″ balls and place 2-3″ a part on the baking sheet.
Bake for 8-10 minutes. Remove from the oven when they are done and let them cool completely.
Time to make some Minions!
Combine the powdered sugar, softened butter, and vanilla extract. Add the milk 1 tablespoon at a time until the consistency of the frosting is just right. Add several drops of yellow gel food coloring to the frosting and mix well.
Scoop the frosting into a large freezer bag OR a disposable piping bag and snip the corner with the kitchen scissors.
Frost each cookie and use a small spatula to spread the frosting out evenly.
Give each cookie 1-2 candy eyes.
Gently squeeze the black frosting around the candy eyes.
You got yourself a Minion!
Haute Tips:
- If you don’t have any piping bags handy, use a large plastic bag and cut the tip off.
- To get the full effect, you should definitely eat these cookies while watching The Minions Movie!
